Thanksgiving Week Post 2

We realized this last weekend that we were hosting Thanksgiving Dinner in a few days and we hadn't decided what to cook or bought any food. So Saturday I poured over all my recipes and finally came up with a menu:
Homemade Seitan Turkey
Sausage Stuffing
Gravy
Potato dish (brought by a guest)
Sweet potato dish (brought by another guest)
Cranberry Relish
Green beans with caramelized onions
Arugula Salad with beets, citrus, and goat cheese
Dinner rolls
Pumpkin Creme Brulee for desert

I also came up with a schedule for when to cook what. I am taking Wed off from work and will be able to prep or make many of these things the day before Thanksgiving so that I won't be running around like a mad woman that day. I hope it all works out. I have never made the seitan turkey or creme brulee before. Wish me luck!
